Spicy chicken nachos


Last night needed a quick yet comforting dinner as we’d spent all afternoon getting the house decorated for Christmas!

The answer – spiced chicken nachos! This is one of my current favourites for being seriously tasty for minimal effort! Also great for if you have friends popping over unexpectedly.

You will need the following (no quantities given so you can scale this up or down for a snack or a main meal for as many people as you like)!

  • Nachos – I like the cool original Doritos
  • Chicken breast
  • Onion
  • Pepper
  • Seasoning mix – I used the Old El Paso taco mix
  • Sour cream
  • Cheese, grated
  • Tomatoes
  • Tomato purée
  • Tabasco sauce

Step 1

Make a quick salsa by chopping up the tomatoes, and adding tomato purée and Tabasco to taste.

Step 2

Cut the chicken breast into strips and stir-fry with finely chopped onion and pepper. Add the seasoning mix once this is almost cooked.

Step 3

Put everything together! I like to use a pizza tray with holes in the bottom to keep the nachos crispy but a baking tray would work just fine. Add blobs of the salsa on top of the crisps, followed by the chicken and onion mixture. Cover with grated cheese and cook under a hot grill for just long enough to melt the cheese.

Step 4

Enjoy straight away with a dollop of sour cream!

The list of ingredients above is really just a guide as you could top your nachos with whatever you fancy…… jalapeño slices, beef chilli, anything you think of. I would usually put a picture up so you can see how they looked, but I’m afraid they didn’t last long enough to be photographed!!
