We needed a quick dinner tonight between getting home a bit late from work and heading out to the gym – I made my favourite (and very quick) Oriental Salmon Noodles.
To serve two people you will need:
- 2 salmon fillets
- 1 small onion, sliced
- 1 – 2 cloves garlic, finely chopped
- 1 red pepper
- 1 handful of mangetout
- noodles (as many as you want to eat!)
- soy sauce
- sweet chilli sauce
- honey
You need three pans on the go for this one, one filled with boiling water for the noodles, a second to stir-fry the vegetables, and a third one for the salmon. I pan-fried the fish skin-side down with a lid covering the frying pan. This acts like an oven and cooks the fish from all sides as well as giving it a lovely crispness on the skin.
The sauce is really easy, just dark soy sauce, sweet chilli sauce and honey – this can be mixed to your taste depending how hot or sweet you want to make it. Add the sauce to the vegetables, and stir in the noodles when they have been cooked and drained. Place the salmon on the top and enjoy!
