I’m back! Sorry to those of you who thought I’d disappeared off the face of the earth but work and being a bit poorly has meant no applepiezucchini posts for the past week or two.
Last night we had some minced beef to use up but didn’t fancy any of the usual suspects of lasagne/bolognese/tacos/shepherd’s pie…and so I decided to make a quick and tasty beef burgers from an old recipe I found while I was at uni. I can’t remember where this came from but it’s definitely worth passing on!
You will need
- 500g lean minced beef
- 1 tbsp tomato puree
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp cayenne pepper
- 1/2 tsp mustard powder
- 2 shallots, finely chopped
- 2 tsp freshly grated ginger
- 2 garlic gloves, crushed
- 2 tbsp chopped coriander
- 1 egg
- salt and pepper
Just mix everything together! I used one small onion instead of the shallots and think it works just as will. Shape the mix into 6 burgers, cover and chill in the fridge for at least 30 mins to allow the flavours to mix together. Then fry or grill, whatever you prefer! Just make sure you shape the burgers quite firmly or they will try and fall apart when you turn them over!
These are delicious with homemade potato wedges and mango chutney, or like we had then last night in burger baps with salad. The recipe came with a quick recipe for a tomato and red onion raita which we didn’t make last night but I’ll put the ingredients here incase you fancy trying it.
- 1 red onion
- 4 ripe tomatoes
- 1 heaped tbsp chopped coriander
- Pinch cayenne pepper
- Juice of 1/2 a lime
