Flapjacks!

Flapjacks are one of my favourite comfort foods – and seem less of a guilty pleasure than the usual chocolate-laden cakes and biscuits that I make! Very cheap and instantly satisfying!

To make these I used:

  • 75g butter
  • 175g rolled oats
  • 50g muscovado sugar
  • 2 tbsp golden syrup
  • sultanas (as many as you want!)

I added the sultanas but the other ingredients are from a basic flapjack recipe in the Good Housekeeping cookery book which is a bit of a recipe bible!!

Just press into a greased baking tin and bake at 160 degrees in a fan oven for about 20 minutes. As soon as these are out of the oven I score lines between the pieces and leave to cool fully. This helps to separate the pieces when they come out of the tin.

I quite like playing with the flapjack recipe, by adding different fruits or nuts to the mixture, or by drizzling chocolate over the top. Yum!
