It’s heading towards Easter, and the latest Good Food magazine I bought is crammed full of Easter treats and fun things to make. I immediately liked the look of these Hot Cross Cookies, being a cross between a chocolate chip cookie and a hot cross bun and had to give them a go, especially after the recent success of the cardamom cookies!
For about 18-20 cookies you will need:
- 7 oz softened butter
- 4 oz light muscovado sugar
- 1 egg
- 9 oz plain flour
- 1 tsp cinnamon
- 2 tsp baking powder
- 4 oz sultanas
- 7 oz white chocolate chips
Mix the butter, sugar and egg together, before adding the flour, cinnamon and baking powder. Once you have a cookie dough, stir in the sultanas and about half of the chocolate chips.
Roll balls of the dough to about the size of gold balls and flatten onto a greased baking tray or two. These cookies needed a little over 10 minutes in a fan oven at 160 degrees (180 for a non-fan oven).
Gently melt the remaining white chocolate and drizzle a cross onto each cookie once they have cooled…..and voila! Hot Cross Cookies to start getting you into the Easter mood!!
By the way, I always have difficulty melting white chocolate, which I do very slowly in a bowl over a pan of barely simmering water. This works so well for dark or milk chocolate but I never seem to get white chocolate quite right – any tips gratefully received!!
