Mozzarella, tomato and rocket salad

I nearly called this post “Quite possibly the best salad ever” because I think it was one of the nicest things I have ever eaten! It was ridiculously simple but all the flavours complimented each other so well that it was an instant winner. A bit like a caprese salad, but with rocket instead of basil, and with the usual raw tomatoes being replaced by some Moonblush tomatoes.

There’s not much of a recipe for this one! All that is in the salad is:

  • Mozzarella, ripped into pieces
  • Moonblush tomatoes
  • Rocket
  • Balsamic vinegar

The only thing to say is that it’s worth buying good balsamic. I always have two bottles in the cupboard – a cheapish one for cooking with, and a really nice but more expensive one for salad dressings and for dipping fresh bread into. Because the flavours in this salad are so simple but bold a bad vinegar could spoil the whole thing…. it’s worth picking one which has a decent amount of sweetness as well as sharpness.

This would be great as a quick little starter or as a side dish with some pasta. I don’t think we can really call this cooking but it was so tasty I had to post!
