Into the second week back to work, and some therapeutic baking was needed today! I turned to my Nigella Express book for inspiration and found this nice recipe for Chocolate Mint Cookies which I don’t remember having seen before. They are currently disappearing at a surprising rate while Ben is finishing his thesis so they can’t be bad!
For about 26 cookies you will need:
- 100g soft butter
- 150g brown sugar
- 1 tsp vanilla extract
- 1 egg
- 150g plain flour
- 35g coca powder
- 1/2 tsp baking powder
- 200g chocolate chips
Easy peasy – just mix everything together and put spoonfuls onto a baking sheet. They are done after 12 minutes in an oven at 180 degrees / gas mark 4.
Now you are probably wondering where the mint has gone in these Chocolate Mint cookies, and the answer is in the glaze which is drizzled over the cookies while they are cooling! For this you will need to melt the following in a saucepan until combined.
- 75g icing sugar
- 1 tbsp cocoa powder
- 2 tbsp boiling water
- 1/4 tsp peppermint extract
I love these and will be making them again soon. The book suggests having these with coffee in place of a formal desert which I think is a great plan. Despite all the chocolate these cookies are surprisingly light…..and very moreish!
